Particularly interested in the area including the hills in the center of the province of Ancona and minimally defined in the territories of Macerata. For wines produced in the original older, the Castelli di Jesi is granted the use of the term classic.

Aspect
Straw yellow, sometimes with subtle nuances that turn green to gold with aging.
Perfume
Delicate, fresh and persistent fragrance of fruit and flowers, a hint of bitter almonds.

Alcohol
For the Verdicchio dei Castelli di Jesi Classico, minimum 11.5°. For Classico Superiore minimum 12° and 12.5° for the minimum reserve.

The term Reserve may be designated on the label if the wine has an alcohol content of 12.5 degrees and a minimum aging of 24 months, of which at least 6 in bottle. The person must have at least one type of alcohol 15° and about a year old

Pairing with food

All dishes of Mediterranean cuisine are satisfied with the turning of a "Verdicchio" appetizers, white meat, more or less elaborate, boiled meat, mushrooms, truffles, fried vegetables. The fish is the "marriage" of choice. Good even with the more elaborate recipes that require a wine with strong personality.

How to serve

The cup-shaped semiovoidale stretched to the edge, thin, colorless, slender stem, allows the expression of the best perfumes (fruit and flowers) of wine presented in his youth. Serve at a temperature of 10° -12° C. If tasted as an aperitif the optimum temperature is 8° -10° C.
